Taco Salad

Growing up this was one of my brothers all time favorite dinners! I remember how excited he got when he saw the extra large stainless still bowl of salad on the table. I know what your thinking: excited about salad? Something about all the toppings and Mexican flavors made it a family favorite for me and my siblings and now it's one of my kids favorites. I've enjoyed watching my kids get excited about salad, just like I did as a kid.

Ingredients:
  • 1 lb ground beef
  • 1 tsp avocado oil
  • 2 tsp taco seasoning
  • 8 oz romaine lettuce, chopped
  • 1 cup tomatoes, chopped 
  • 1/2 cup cheddar cheese, shredded 
  • 1 medium avocado, cubed
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 4 cups tortillas chips or strips (optional)
Directions:
  1. In large skillet, heat oil over high heat. Add ground beef. Break up beef with spatula until meat is browned and moisture has evaporated (about 7-10 minutes).
  2. Stir taco seasoning into beef util well combined. 
  3. In large bowl combine all remaining ingredients. Add ground beef and toss together. 
  4. Top with tortillas chips/strips if desired.

Kool-Aid Dessert

This is a refreshing treat, great for a summer day. Ingredients: 2 cans evaporated milk 2 cups sugar 2 pkg kool-aid (any flavor) 2 pkg graham crackers, crushed 1 cube margarine, melted Directions: Chill canned milk in fridge Melt margarine and mix with crumbs Press 2/3 crumbs into 9x13 dish Whip chilled milk at high speed until fluffy Add sugar and kool-aid Pour over crust and top with remaining crumbs Freeze and enjoy!

Applesauce Cookies

My husband grew up on applesauce cookies, my kids know they are likely going to enjoy a few when they visit Grandma Palmer. I'd never tried applesauce cookies until my husband introduced me to them but have learned to make them. Ingredients:  1 cup shortening 4 eggs 2 cups sugar 2 cups applesauce 2 tsp vanilla 2 tsp baking soda 1 tsp cinnamon 1 tsp cloves 1 tsp nutmeg 1 tsp salt 4 1/3 cup flour Directions: In mixer combine shortening, eggs and applesauce and mix Add remaining ingredients and mix well. Bake 375 degrees for 10-12 min

Mom's Sugar Cookies

My husbands mom is known for making sugar cookies around the holidays. We have the tradition in our family too although mine never seem to turn out as good as hers. Ingredients: 2/3 cup shortening 3/4 cup sugar 1 egg 1 Tbsp vanilla 2 cup flour 1 1/2 tsp baking powder 1/2 tsp salt 4 tsp milk Directions:  In a mixer cream together shortening, sugar, egg and vanilla Add remaining ingredients and mix well Bake 375 degrees for 8-10 minutes  Frosting: 1/2 cup butter 1/2 cup powdered sugar milk to consistency
